Pumpkin muffins

Thanksgiving desserts

Ingredients

  • 1 3/4 cups of all-purpose flour
  • ¾ cup of packed brown sugar
  • 1 ½ teaspoons of baking powder
  • 1 teaspoon of cinnamon
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ teaspoon ground sugar
  • ¼ teaspoon ground cloves
  • ¼ teaspoon nutmeg
  • ½ cup of chopped walnut halves
  • 2 eggs
  • ¾ cup of canned pumpkin puree
  • ¼ cup of vegetable oil
  • 1 teaspoon of vanilla

Directions

1. Preheat your oven to 375 degrees F.

2. Line 12 muffin cups with paper liners or grease.

3. Whisk the flour, sugar, baking powder, cinnamon, baking soda, salt, ginger, cloves and nutmeg together in a bowl.

4. Mix in ¼ cup of the walnuts.

5. Using a separate bowl, whisk the eggs, pumpkin puree, oil and vanilla.

6. Combine both mixture and stir until one mass.

7. Spoon into muffin cups and sprinkle with the remaining walnuts.

8. Bake for 20-25 minutes or until golden brown.  They should be firm to the touch.

Maple cream cheese spread (optional)

Ingredients

  • ½ package of softened cream cheese
  • 1 tablespoon of icing sugar
  • 1 tablespoon of maple syrup
  • ¼ teaspoon of vanilla

Directions

1. Beat the cream cheese until it is light.

2. Mix in the icing sugar, maple syrup and vanilla until completely blended.

3. Spread over muffins.
